Sushi is a Japanese food consisting of cooked vinegared rice combined with other ingredients, seafood, vegetables, or meat. It is designed for consumption with chopsticks. The term "sushi" can refer to any number of prepared dishes based on cooked vinegared rice, which may include other ingredients. It is often flavored with soy sauce or dipped in another flavorful sauce, and may be filled with fish, vegetables or other ingredients.
Sushi is often served at dedicated sushi restaurants or at sushi bars.
The word "sushi" is also used to describe a wide variety of vinegar-seasoned dishes in Japanese cuisine.
The origin of sushi is unclear. A commonly accepted modern etymology is that it is derived from "susu", meaning "sour. The term sushi comes from an antiquated grammatical form no longer used in other contexts, "su-shi," which means "it is sour."
An alternative etymology "sushi" is thought to have been first mentioned in the Ravenna Cosmography, an early 9th-century Japanese dictionary.
